New page

''' Knedliky from Czech Cookery book '''

200 g coarse flour

15 g yeast

Approx. 150 ml milk

1 egg yolk

Salt

Flour for rolling

2 white bread rolls, slightly stale

Sieve the flour into a bowl, crumble the yeast into it, add 2 tablespoons warm milk and mix into a dough, adding more flour if necessary. Cover the bowl. When the dough has risen, add the egg yolk and salt, and work it into a thicker dough with the remaining milk. Dust with flour and leave to rise.

Dice the rolls and work them into the risen dough. Divide the dough into two parts and roll each into a long cylindrical dumpling. Place in boiling salted water and boil for 25 minutes. Take the dumplings out of the water and cut them into slices using a thread.
